Abstract

The implementation of the Good Manufacturing Practice (GMP) program is one of the company's efforts to guarantee a food safety system to consumers. This research was conducted with the aim of identifying and analyzing aspects of GMP implementation carried out by UMKM Bu Karno, with standard provisions for GMP implementation based on the Regulation of the Minister of Industry of the Republic of Indonesia Number 75 of 2010, and providing recommendations for improvements to meet the requirements and effectiveness of GMP implementation. The method in this research is descriptive qualitative. The population used in this study is UMKM Bu Karno and the samples used are business owners and experts in their fields. Identification and analysis of data obtained by GMP through filling out questionnaires using a checklist and analyzing data using Gap Analysis on every aspect of GMP implementation, the data that has been processed produces an average total percentage of 70.06%, which means that the GMP program at UMKM Bu Karno still needs to be improved to meet GMP requirements and improve the effectiveness of GMP program implementation. The company also needs to consider the recommendations for improvement provided, in order to improve the quality of the implementation of the GMP program.
