Abstract
Obesity means being fat or overweight. One of reasons gaining less attention aside from too much energy is too less fiber consumption. High-fiber food can reduce the risk of obesity. The purpose of the research is to analyze high-fiber biscuit production from red beans and corn bran as alternative variation for obese female teenagers. Based on the research conducted, it can be concluded that fiber shows real and different results between the treatments. The production of biscuits from red beans and corn bran is different (or significant) on the hedonic test and the hedonic quality. The good treatment to the biscuit production from red beans and corn bran is A4 treatment by ratio on 40% of red beans and 60% of corn bran. High-fiber biscuit from red beans and corn bran based on A4 biscuit nutrition composition is highly recommended. Biscuits to consume are 6 to 12 pieces per day.
