Abstract
Proses oksidasi enzimatis dimulai saat bubuk teh yang telah melalui proses penggilingan menggunakan Roll CTC dibawa oleh Conveyor menuju mesin Fermenting Machine dan diratakan dengan Spreader. Selanjutnya partikel teh berjalan diatas Belt Conveyor. Proses oksidasi enzimatis untuk menentukan rasa, aroma dan warna teh hitam
