Abstract

Coffee is one of the plantation commodities that has a large contribution to foreign exchange earnings, both domestically and internationally. Raw coffee beans play a crucial role in the production process. The quality of coffee beans plays a crucial role for both producers and consumers, and standardizing the quality of coffee beans can ensure that the product meets quality standards. The roasting process is one of the processes that can determine the quality of coffee, affecting the taste and aroma of the coffee beans. The weight ratio of coffee to water, temperature, and brewing techniques are important aspects in producing a delicious coffee taste. The research was conducted at the Agricultural Product Processing Laboratory and conducted from May to June 2025 using a Non-Factorial Completely Randomized Design (CRD) method with treatments consisting of four levels of roasting temperature with two treatment factors, namely chemical characteristics (moisture content, pH) and organoleptic tests (color, aroma, flavour, body, bitterness, aftertaste, and overall). Chemical characteristics were conducted using a descriptive research method. The highest water content was obtained in treatment 1 (180°C) with an average of 4.00%, the highest pH was obtained in treatment 4 (240°C) with an average of 5.29. The results of the interaction of organoleptic characteristics had a very significant effect. The author suggests further research related to the effect of roasting temperature using different coffee varieties to encourage innovation as a comparison material.
