Abstract

Taro is a plant that has been cultivated and consumed by communities for a long time. Colocasia Esculenta L. is known as a succulent plant, meaning a plant whose tubers have relatively high water content, making them prone to spoilage and deterioration after harvest. The drying process aims to extend shelf life and reduce the water content of taro. The objective of this research is to determine the appropriate mathematical model for the kinetics of thin-layer drying of Ambon bananas with osmotic dehydration treatment using a dehydrator. The objective of this research is to determine the appropriate mathematical model for the kinetics of Taro with immersion with NaCl liquid 10% treatment using a dehydrator. Seven mathematical models will be tested with statistical analysis of coefficient of determination (R²), root mean square error (RMSE), and sum of squared error to determine the suitable model and determine the effective moisture diffusivity (Deff). The most suitable taro drying kinetics model using a food dehydrator varies depending on temperature and tray position. At 50°C, the suitable model is Modified-Midilli, while at 60°C and 70°C, the Lewis model proves to be the most accurate for all trays based on the highest R² values and the lowest SSE and RMSE values.menggunakan jenis huruf Times New Roman, ukuran huruf 11 dan italic serta 1 spasi alinea.
