Abstract
The shell of the rice snail (Pila ampullacea) is one of the gastropod class animals that has potential as a raw material in the process of production nanochitosan because it contains chitin and chitosan compounds. Nanochitosan is a dosage form based on nanotechnology which has more reactive properties. The purpose of this study was to characterize, determine the imaging of chitosan and nanochitosan extracted from rice snail shell waste, and evaluate the effectiveness of nanochitosan as a natural disinfectant in fresh vegetables. The production of chitin through the process of deproteination and demineralization, followed by the production of chitosan using the deacetylation method. For the production of nanochitosan using the ionic gelation method. The tests carried out included analysis of the functional group of chitosan using FTIR, testing the characteristics of nanochitosan using SEM, PSA and Zeta Potential, measuring MBC and MIC values, analyzing the effectiveness of nanochitosan from rice field snail shells as a natural disinfectant in fresh vegetables and calculating bacterial colonies using the TPC method. Testing the effectiveness of nanochitosan was carried out by immersing vegetable samples in nano solution with soaking time treatments for 0, 5, 10 and 15 minutes. The results showed that the most effective reduction in pathogenic bacteria occurred at 15 minutes of immersion, lettuce (P. aeruginosa, S. enterica serovar Typhimurium, L. monocytogenes, S. aureus and B. cereus) respectively, namely 2,185, 2,177, 2,092, 1,401 and 2,524 log reductions. Nightshade berries (P. aeruginosa, S. enterica serovar Typhimurium, L. monocytogenes, S. aureus and B. cereus) were 1,800, 2,439, 2,143, 1,301 and 2,280 log reduction.
