Abstract
Autism is a developmental disorder in children that appears before visiting the age of three years. autism patient has an indigestion called leaky gut syndrome. The digestive process is not perfect because there is a disruption in the production of digestive enzymes that cause gluten and casein cannot be completely digested. One of the way that can be done for therapy is to control their dietary habit by avoiding gluten and casein. Alternatives that can be developed are the use of cilembu sweet potato flour and soybean powder as free gluten and casein ingredients in making the cookies. This study aimed to analyze the quality characteristics of cookies from cilembu sweet potato flour and soybean powder. The design used was Complete Random Design (RAL) with 6 treatment formulations, namely 30%: 70%, 40%: 60%, 50%: 50%, 60%: 40%, 70%: 30% and 80%: 20% with 4 times repetitions. Based on the results of the study showed that the more soybean powder used, the higher the protein content (8,92%) and the more use of cilembu sweet potato flour the harder the texture (15,59 N). putting The proportion 40% for cilembu sweet potato flour and 60% for soybean powder produced the best cookies. Cookies with the best treatment have a 8.22% protein content, 28.35% fat, 57.76% carbohydrate, 1.58% ash, 4.08% water. Patients are encouraged to consume 5 up to 10 pieces of cookies with an energy content of 259.5 kkal, 3.69 grams of protein, 12.75 grams of fat, 25.99 grams of carbohydrates a day.
