Abstract

Toddler is one of vulnerable groups in the society or in other words, they are easily suffered from malnutrition or getting nutritional disorders. The main cause of malnutrition among toddlers is due to inadequate intake of energy, protein and vitamins A because of poverty. Those existing problems can be solved with food diversification by developing local food because land of Indonesia has many potential sources of local food like tubers of arrowroot and Moringa leaves.This study aimed to determine the effect of arrowroot starch and Moringa leaves flour in producing cookies as supplementary food (PMT) for toddlers.The research design used was completely randomized design. Determination of formulation in this study was 97%: 3%, 94%: 6%, 91%: 9%, 88%: 12%, 85%: 15%, 82%: 18% and 79%: 21% of each treatment was repeated 4 times.The research result showed that the greater percentage of Moringa leaves powder, the greater it affected the nutrient content and organoleptic of the cookies. The lower percentage of Moringa leaves, the lower content of protein and vitamin A. The higher percentage of arrowroot starch, the higher its carbohydrate content. Chemical and organoleptic analysis affect significantly P = 0.000 (significant). The best treatment occured in P2 treatment with the formulation of arrowroot starch 94% + 6% Moringa leaves flour.
