Abstract
This research aims to determine the effect of adding areca nut seeds on the carcass and physical quality of KUB chicken meat which includes pH value, cooking loss, meat tenderness, water holding capacity, carcass weight and carcass percentage. This research was carried out using the Completely Randomized Design (CRD) and Analysis of Variance (ANOVA) method using a unidirectional pattern with 5 treatments and 5 replications so that there were 20 experimental units with a total population of 100 KUB chickens and if there were significant differences, it was continued with testing. Duncan Multiple Range Test (DMRT). The treatments given were P0 (without using areca nut seed flour), P1 (0.25% areca nut seed flour in feed), P2 (0.5% areca nut seed flour in feed) P3 (0.75% areca nut seed flour areca nut in feed) and P4 (1.0% areca nut meal in feed). The results of this study showed that the addition of areca nut seeds had no significant effect (P<0.05) on the carcass and physical quality of KUB chicken which included pH value, cooking loss, meat tenderness, water holding capacity, carcass weight and percentage carcass.
