Abstract
School-age children are vulnerable to nutritional problems that are influenced by the quality and quantity of their food intake. Recent data show the presence of undernutrition and overnutrition problems among school-age children, including at SDIT Harapan Umat Jember. The purpose of this study was to determine the relationship between portion size compliance and food acceptability with the nutritional status of full-day school children at SDIT Harapan Umat Jember. The type of research used was analytic observational with a cross-sectional approach. The research subjects were 162 students of grades 3, 4, and 5 at SDIT Harapan Umat Jember who participated in the full-day school program and received catering services from the school. The sampling technique used was purposive sampling. The instruments used in this study included measurements of body weight and height to determine nutritional status using the Body Mass Index for Age (BMI/Age), weighing of lunch portions to assess portion size compliance, as well as a food acceptability questionnaire using the hedonic scale test which measured aspects of taste, appearance, texture, color, aroma, and food portion. The results of the Fisher’s Exact Test showed that there was a significant relationship between portion size compliance and nutritional status (p = 0.001). Meanwhile, there was no significant relationship between food acceptability and nutritional status (p = 1.000). These results indicate that most students had high acceptability of the food served; however, variations in nutritional status were not entirely influenced by the level of preference for food. Other factors such as eating habits outside of school, daily intake, and physical activity levels also contributed to determining the students’ nutritional status.

Subjek penelitian adalah 162 siswa kelas 3, 4, dan 5 SDIT Harapan Umat Jember yang mengikuti program full day school dan menerima layanan katering makanan dari sekolah. Teknik pengambilan sampel menggunakan teknik purposive sampling. Instrumen yang digunakan dalam penelitian ini meliputi pengukuran berat badan dan tinggi badan untuk menentukan status gizi dengan indeks massa tubuh menurut umur (IMT/U), penimbangan porsi makan siang untuk menilai kesesuaian standar porsi, serta kuesioner uji daya terima makanan dengan skala hedonic scale test yang mengukur aspek rasa, penampilan, tekstur, warna, aroma, dan porsi makanan. Hasil uji Fisher’s Exact Test menunjukkan bahwa terdapat hubungan yang signifikan antara kesesuaian standar porsi dengan status gizi (p = 0,001). Sementara itu, tidak ditemukan hubungan yang signifikan antara daya terima makanan dengan status gizi (p = 1,000). Hasil ini menunjukkan bahwa sebagian besar siswa memiliki daya terima yang tinggi terhadap makanan yang disajikan, namun variasi status gizi tidak sepenuhnya dipengaruhi oleh tingkat kesukaan terhadap makanan. Faktor lain seperti kebiasaan makan di luar sekolah, asupan harian, serta tingkat aktivitas fisik turut berkontribusi dalam menentukan status gizi siswa. | ||||||
