Abstract

Anemia is a nutritional problem that is quite high in Indonesia. According to WHO (2021), the prevalence of anemia among children aged 15 to 49 years in Indonesia increased from 29.6% in 2017 to 30.4% in 2018 and 31.2% in 2019. Anemia is caused by low blood sugar, which can slows growth and development. Anemia can be treated by eating iron. This research aims to understand the nutritional and organoleptic characteristics of Moringa leaf flour nuggets as a high-calorie food. This research uses RAL. Repetition of Moringa leaf flour 5 times in treatments P1 (4%), P2 (8%), P3 (12%), P4 (16%), and P5 (20%). This study did not find significant differences marked by a significance value of more than 0.05 in the nugget iron content in each treatment. Treatment P5 received the highest score in the color aspect of the hedonic quality test and the panelists liked the color produced. Treatment P1 received the highest score in the hedonic quality test for aroma, taste and texture aspects and the panelists liked the aroma, taste and texture produced. The best treatment from this study was P1 (4%). Giving skipjack tuna nuggets a combination of Moringa leaf flour as much as 75 grams per day (3 pieces) and has the advantage of being low in fat, namely less than 3 grams, so it is used as an alternative to prevent degenerative diseases.
