Abstract
This research aims to determine the effect of soaking time in duck eggs with a solution of rambutan leaves with different soaking times. The research method used is an experimental method using a completely randomized design (CRD) unidirectional pattern. Experiments were carried out by immersing for P1 (12 hour), P2 (24 hour), P3 (36 hour), and P4 (48 hour). Observation of egg quality was carried out with a shelf life of 7 days (K1), 14 days (K2), and 21 days (K3). The parameters tested were the percentage of egg weight reduction, air cavity height, egg yolk color, white index, yellow index, pH value, and haugh unit. Egg interior quality test data were analyzed by analysis of variance and if there were differences in the mean, it was further tested with Duncan's New Multiple Range Test. Research showed that the duration of soaking with rambutan leaf solution in duck eggs was significant (p <0.01) on the parameters of shrinkage of egg weight, air cavity height, egg white index, pH value and not significant to yellow color score, egg yolk index, haugh index of units. The best time to soak the rambutan leaves against the interior quality of duck eggs is 48 hours. Keyword : Duck Eggs, Egg Interior Quality, Rambutan Leaf.
