Abstract
Dragon fruit is preferably fruit because it has a good shape, sweet taste, fresh and a lot of health benefit. Unfortunately, all parts of the fruit are not utilized yet, One of that parts is the fruit pell, which accounted 30-35% of fruit. Besides, it also contains abundants of anthocyanin that can be used as natural dye that is good for health. There are a lot of another uses of dragon fruit’s pell, one of those is as jelly candy. The method used in this experiment was experimental method by Completely Randomized Design (CRD) non-factorial with 6 treatments (A0 = without addition of Aloe vera nor Seaweed, A1 = 65% of Aloe vera and 35% of Seaweed, A2 = 60% of Aloe vera and 40% of Seaweed, A3 = 55% of Aloe vera and 45% of Seaweed, A4 = 50% of Aloe vera and 50% of Seaweed, A5 = 45% of Aloe vera and 55% of Seaweed) which was repeated for 4 times. The parameters under investigation were physical, chemical, and organoleptic test. The research showed significantly different in some parameters such as moisture content, texture, and organoleptic properties except aroma. The moisture contents of jelly candy were A0: 11,34%, A5: 16,51% A4: 18,29% A3: 19,47%, A2: 20,50 % dan A1: 23,92% respectively. In adidition, the texture of jelly candy were A5: 4,34, A4: 5,68, A3: 6,24 A2: 7,28, A1: 8,26, A0: 8,97, respectively.
