Abstract

In this research aims to determine the effect of dipping chicken eggs into cinnamon solution and storing room temperature to internal quality of chicken eggs. This research method used experimental method with four treatments, in each treatment consist of six replications and each replication consist of ten eggs. The experimental design used randomized complete design (RCD). The data were analyzed by analysis of variance and if the average results were obtained by Significant Difference test (LSD). The treatment consist of P0(without using cinnamon), P1 (5%), P2 (10%) and P3 (15%), with 27 day storage period. This research used 240 eggs for day one (before saving). The treatment carried out in this research was immersion of eggs into cinnamon solution for 60 minutes then stored at room temperature. The parameters observed, egg white index, egg yolk index, haugh unit and egg weight decrease. The results in this research, cinnamon dipping with different concentrations, P3 0,062 (P<0,05) at 21 day, P3 0,056 (P<0,0) at 24 day dan P3 0,059 (P<0,01) at 27 dayon the egg white index, haugh Unit P3 144,62 (P<0,01) at 27 day and did not differ significantly (P>0,05) at index of egg yolk and decrease in egg weight.
