Abstract

Cowhide is a commodity that is widely used in Indonesia. The rambak cracker is one of the preparations made from cowhide as raw material. The relatively stabel demand for rambak crackers makes competition between producers tighter, therefore every producer is required to always maintain and maintain the quality of the products produced. This study aims to determine the quality control of rambak crackers, the application of control charts and process capabilities at UD Special 1 in Jember Regency. The research method used is Statistical Process Control (SPC) with control chart analysis tools, Pareto diagrams, Ishikawa diagrams and process capabilities. The results showed that on the control chart, the color uniformity attribute found 9 points exceeding the control limit, on the integrity attribute 11 points were found to exceed the control limit and on the texture attribute there were 10 points that exceeded the control limit. The value of process capability for each attribute of integrity, texture and color uniformity were 89%, 90% and 91%, respectively.
