Abstract

Local food is a food product that has been produced and is closely related to the culture of the local community. Various local food in large quantities can potentially lead to national independence. The industrial sector also plays a role in the processing of agricultural products. Jember is one of the districts that produces food crop commodities, namely soybeans, with the largest production in Bangsalsari District. The purpose of this research is very important in analyzing activities that generate added value and help achieve food security in Bangsalsari District, Jember Regency. This research uses descriptive quantitative using value chain analysis techniques, business costs, value added analysis. Local soybean value chain activities involve three main actors, namely farmers, collectors and processors and there are ten supporting actors. The total cost incurred by perpetani is IDR 3,933,132 / season with revenues of IDR 8,131,250 / season, resulting in added value per 1 kg of soybean seeds of IDR 217,060 / kg on sales to collectors and resulting in added value of IDR 247,774 / kg. . For collectors with a total cost of IDR 66,177,400 / season with a total revenue of 69,390,000 / month, so you get an added value of IDR 418 / kg on sales to processors, IDR 810 / kg for sales to local traders, and IDR 978 / kg on sales to traders between districts. In the tempe processor, the total cost is Rp. 12,053,559 / year and the income is Rp. 16,250,000 / year with the added value of Rp. 6,790 / kg of processed soybeans. For tofu processors, the cost is IDR 12,735,972 / year, IDR 16,200,000 / year is received by getting added value in the raw tofu of IDR 3,271 / kg of processed soybeans and IDR 16,500 / kg of processed soybeans for fried tofu.
