Abstract

This research aims to analyze and design a Standard Operating Procedure (SOP) for the rengginang production process at Tiga Bintang UD, as well as to describe a condition starting from the preparation of raw materials, the production process to the packaging process using a quantitative method with the Miles and Huberman research model. Data obtained from observations, interviews with owners, and documentation. UD Tiga Bintang is located in Gumuk Village, Panarukan District, Situbondo Regency. The results of this study are proposed improvements to the process flow, application of Standard Operating Procedures (SOP), as well as evaluation of the implementation of SOPs with Chi Square analysis to maintain product quality and reduce defects in rengginang products during production, product defects resulting from a high number of 310 to 161. The existence of an SOP can provide guidance for the rengginang production process to be carried out consistently in order to provide good product quality.
