Abstract

Diabetes mellitus is a disease with metabolic disorders originating from the distribution of sugar by the body. One effort that can be done is by consuming the right foods containing of high fiber and have a low glycemic index (IG). This study aimed to determine the nature of the quality and value of the Glycemic Index in wet noodles with uwi flour substitutions. The design used was completely randomized design (CRD) with 5 treatment formulations namely 90%: 10%, 80%: 20%, 70%: 30%, 60%: 40%, 50%: 50% and was repeated 5 times. The research parameters were organoleptic test (hedonic and hedonic quality), effectiveness index test, proximate analysis test and glycemic index value. Organoleptic test results of hedonic (taste and texture) and hedonic (color) quality in each treatment showed results that were not significantly different (P> 0.05) whereas in hedonic (color and aroma) and hedonic (taste, aroma, texture) results showed significantly different results (P <0.05). The results showed that the best treatment was P3 (70% flour + 30% uwi flour) with an energy content of 292.36 kcal, protein 6.79%, fat 1.84% and carbohydrates 62.16%. The glycemic index value in the wet noodle substitute for uwi flour was 61.63.
