Abstract
Kemuning Lor, Arjasa District is one of producing coffee area, which is located at the foot of Mount Argopuro. Our partner is one of the coffee farmers who has a coffee land area of 1 ha, produced 21,750 kg of coffee and produce 1,612 kg of coffee skin waste. In terms of nutritional value, coffee skin contains active compounds, namely tannins 1.8-8.56%, pectin 6.5%, caffeine 1.3%, chlorogenic acid 2.6%, caffeic acid 1.6%, anthocyanins total of 43%. Coffee skin waste is only used as fertilizer for coffee trees, even though the economic value of coffee skin can be increased by processing it into cascara tea bags. In order to bridge the knowledge limitations and skills of coffee farmers to process coffee skin waste, training on the manufacture of cascara and its marketing process has been held. Coffee skin drying is one of the determining factors to obtain good quality cascara. Therefore, 1 unit of a cabinet dryer has been given directly to partners, to support the cascara production process. The results of the cascara test are in accordance with SNI, namely for ash content of 6.978, total phenol of 40.296 and caffeine of 8.087.
