Abstract
Soybean is one of the agricultural products in Indonesia from soybeans we can make various types of food, one of which is tofu. Tofu can be processed into side dishes and snacks that are often consumed by people in Indonesia. In Jember Regency there are many tofu factories, one of the tofu factories in Jember Regency is the "Saudara Jaya" tofu factory. This tofu factory has been established since 1991, therefore this factory is well known by the public. The conditions in the factory itself are good, the tofu production process already has a predetermined SOP, but there are some problems faced such as the size is not uniform and the quality of the tofu is not good. This study aims to analyze the quality of tofu so that companies can maintain and improve the quality of the tofu, this study uses the SPC (Statistical Process Control) method, which uses tools such as control charts, process capabilities, Paretom diagrams, cause and effect diagrams and alternative solutions tables. From this method, it is known that the size uniformity variable and tofu quality variable are in control and statistically, for the process capability of the size uniformity variable and the tofu quality variable the company has met the certification and the company standard with the process capability of the size uniformity variable is 94.7% and for tofu quality variable is 96.2%.
