Abstract

This study aims to analyze and design a Standard Operating Procedure (SOP) for the production process of red ginger root instant herbal drink. This research is a quantitative research.. Research with a quantitative approach aims to describe a condition ranging from the process of procuring raw materials, processing, to packaging the red ginger root instant herbal drink found at UD Muzaffer, and this research includes some data in the form of numbers and analysis using statistics. Miles and Huberman. The object of this research is UD Muzaffer in Arjasa District, Situbondo Regency. UD Muzaffer is one of the red ginger instant herbal drink producers located in Situbondo Regency, so we need a guarantee of the quality of its products, therefore an SOP is needed in carrying out the production process. The analysis used is the Chi Square test for product defects. This study resulted in a suggestion of improvements to the flowchart, the application of standard operating procedures that had been applied to UD Muzaffer and resulted in a reduction in the level of defects of the red ginger instant herbal drink. The existence of an SOP can be a guide in carrying out operational activities so that the production process can run well.
