Abstract
One indicator of the success of hospital nutrition services is related to patient’s acceptance of the food served. Plate waste is the percentage of food remaining on a patient’s plate. The objective of this study is to determine the relationship between food taste and satisfaction with food service regarding regular plate waste at RSU Kaliwates Jember. This study employs an analytical observational design with a cross-sectional approach. A total of 50 respondents were selected using a multistage sampling technique, combining cluster sampling and simple random sampling. Data collection in this study utilizes a food taste questionnaire, a food service satisfaction questionnaire (ACHFPSQ), and a Han River brand digital food scale. Statistical analysis was performed using SPSS 24 with the spearman’s correlation test. The result showed no association between food taste and regular food waste at TKTP (p=0,080), and no association between food service satisfaction and regular food waste at TKTP (p=0,156). The conclusion of this study is that food taste and satisfaction with food service are not related to the remaining food at TKTP.
