Abstract
Mud cake is a snack made from potato, flour, milk, sugar and eggs in the ripening process in the roast. The addition of fiber to the sludge cake can be one of the efforts to meet the shortage of fiber as a snack for people with diabetes mellitus type 2. This study aims to assess the addition of breadfruit (Artocarpus Communis) in making a mud cake as a high-fiber snack for people with diabetes mellitus type 2. Supporting a research type used in this study was laboratory experimental, with an analysis of the data using One Way Anova with a degree of confidence of 0,01. Based on research that has been done can be concluded fiber show significant result that significantly different between treatments. The best treatments on making mud cakes with the addition of breadfruit is A4 treatment with breadfruit ratio of 80% : 20% potatoes. Award mud cake premises breadfruit addition of high-fiberbased nutritional composition on A4 recomended treatment sludge cake in consumption, given a single day 4 – 8 mud cake fruit fiber content 2,55 gr/100gr.
