Abstract

The Objective of the study was to know characteristic sensory using quality hedonic and hedonic test local tuber artificial rice that compare with varieties IR 64 rice and commercial artificial rice (Beras Cerdas). Besides that, the objective study about the Glicemic Indeks of Local Tuber artificial rice and compare with varieties 64 rice. Data were analyzed using SPSS 16 Mann-Withney test (Significant < 0,05), Showed differences significant of characteristic sensory and IG values local tuber artificial rice with varieties IR 64 rice. The conclusion of this study is the local tuber artificial rice had different characteristic sensory than varieties 64 rice. More panelist prefer varieties IR 64 rice in all parameter than local tuber aritificial rice. GI values of artificial local tuber is (107,7) and varieties IR 64 rice is (94,1). Local tuber artificial rice and varieties IR 64 rice could be categorizes as having high glicemic indek.
