Abstract

Foodborne Disease is often referred to foodborne illness often heard among the general public. Microbes that often appear in the food is Escherichia coli. Escherichia coli Contamination usually grow because of a lack of knowledge and conduct hygiene and sanitation of food handlers. Cilok is a kind of snack foods made from flour and meat are formed round, has a savory taste and chewy and served with a sauce. The general objective of this study was to determine the relationship of knowledge and conduct hygiene and sanitation of food handlers against E.coli contamination in cilok snacks in Jember. The method used is the analytic survey with Cross Sectional approach. The subjects were all food handlers power amounted to 7 people. Data were analyzed using Spearman Rank test. The results were obtained mostly high school educated subjects 3 people (42.86%). Most subjects were between 34-40 years of 4 people (57.14%). Most subjects of female sex 5 votes (71.43%). From the results of the univariate analysis of the results obtained mostly good subject knowledge as much as 5 people (71.4%). Most of the good results of the subject's behavior as many as five people (71.4%). Mostly there is no contamination of Escherichia coli by 5 (71.4%). Spearman Rank test results showed no correlation between knowledge of hygiene and sanitation with E.coli (p-value = 0.000), there is a relationship between hygiene and sanitation behaviors with E.coli (p-value = 0.000). Conclusion: The knowledge variable and sanitation hygiene behaviors associated with Escherichia coli contamination.
