Abstract

People with hypertension needs interlude food to help them fulfilling the need of nutrient and controlling blood pressure. One of the most favourite food product consumed by society is sausage which later on would be combined with imitation meat and papaya flour, because papaya has high calium extract which expected to be nutritious food for the patient. This research is purposed to find the nutrient especially callium inside sausage made of imitation meat with extra papaya flour as an alternative interlude food for people with hypertension. The experiment design of this research is Fully Randomized Design (FRD). The determination of formation in this research is by adding papaya flour into imitation meat proteina with A1=1,2% ; A2=2,5% ; A3=3,8%, A4=5,2% ; A5=6,4% ; A6=7,7% ; A7=9,0% and in each treatment would be repeated four times. The result shows that every addition of significant amount of papaya flour indicating the increase of callium in sausage which made of imitation meat. The Organoleptic result has no real influence towards texture, color, taste and aroma of sausage. The best treatment is found in A6 with formulation of flour addition until 7,7% becuase it has composition or callium nutrient and organoleptic test which surpass the defined goa
