Abstract

Tefa Polije coffee processing has a superior product, namely ground coffee. The existence of ground coffee products can increase Polije's bargaining position considering that Jember is the best robusta producing city. Unfortunately, this ground coffee can only be enjoyed internally at Polije and cannot be distributed because it does not yet have a legal product. In order to compete with ground coffee on the market, ground coffee must have a distribution permit as proven by a certificate from BPOM. The stage for obtaining a BPOM certificate is implementing Good Manufacturing Practices (GMP) when processing ground coffee. Tefa Ground coffee processing does not yet have PPE so it does not implement Occupational Health and Safety (K3) every time it produces ground coffee. Meanwhile, the requirement to obtain legality is to use Personal Protective Equipment (PPE). The quality consistency and quality of the ground coffee produced is still low due to inconsistent production processes. Not only influenced by raw materials, the production process also plays an important role. The key to the quality of ground coffee in relation to the production process is the consistency of the production process. In order to be consistent, it is necessary to create a Standard Operating Procedure (SOP) for processing ground coffee from each process stage in accordance with GMP.
