Abstract

This research aims to determine the effect of soaking the cashew (Anacardium occidentale L.) leaf solution with different concentrations on the shelf life based on the physical quality of duck eggs. The research material consisted of one day old duck eggs and cashew leaves solution with concentrations of K0 (0%), K1 (5%), K2 (10%), K3 (15%), and K4 (20%). Observation of egg quality was carried out at 7, 14, and 21 days of shelf life. The parameters tested were the percentage of egg weight reduction, air cavity height, yolk color, egg white index, egg yolk index, egg pH value and egg haugh unit. The data from the physical quality test results of duck eggs were analyzed by means analysis of variance and if there were differences in the mean, it was tested by using Duncan's New Multiple Range Test. The results showed that soaking eggs using cashew leaf solution had a very significant effect (P <0.01) on the percentage of egg weight reduction, air cavity height, egg yolk color, egg white index, egg yolk index, egg pH and haugh unit. A solution concentration of up to 20% is the best treatment in inhibiting the rate of decline in quality of duck eggs. Keywords: Physical Quality, Duck Eggs, Cashew Leaves Solution.
