Abstract

Health problems currently has been shifting from the disease an infection to degenerative diseases. One of the factors that influence the disease is the lack of intake the nutrients of food of fiber. Banana heart is part of a plant bananas has any high fiber and has not be used as foodstuffs. Meatballs is the product processed meat often associated as food destitute of fibers. Research aims to understand ingredients nutrition especially fibers , protein , fat in meatballs based the heart banana kepok as an alternative food of high diet fiber. The experimental design used was Complete Random Design. The determination of formulation in the study is done comparison the heart banana kepok and and chicken namely 10 %: 90 %, 20 %: 80 %, 30 %: 70 %, 40 %: 60 %, 50 %: 50 %, 60 %: 40 %, 70 %: 30 % by repetition three times. The research results show that every the addition of the heart banana also gradually going down resulted in the increasingly the womb fibers on meatballs significant. Was inversely and she protein and fat in meatballs higher the addition of the heart banana so the womb proteins and fats will decrease. Organoleptic produced have an very real against texture , color , taste and flavor on meatballs. Formulation comparison the heart banana kepok and chicken every level of treatment influential very real significant of nutrition especially fibers content, protein, and fat and organoleptik meatballs based the heart banana kepok. The best treatment obtained at formulation 80 % of chicken meat and 20 % the heart banana kepok.
