Diabetes Mellitus (DM) is a group of chronic diseases characterizad by increased blood glucose levels as a result of distruption of the bodys metabolic system, where the pancreas organs are unable to produce the hormone insulin according to the bodys needs. Bioactive components that play a role in reducing blood sugar levels are flavonoids found in anthocyanin pigments contained in black sticky rice. The purpose of this study was to determine the effect of giving black glutious rice flour cookies on postprandial blood glucose levels in diabetic rats. This type of research is True Experimental with Pretest-Posttest With Control Group Design. This research uses 18 white Wistar strain, with weight of 200-300 grams, age 2-3 months. Rats divided into 3 groups, the negative control group, the positive control group and the treatment group. The positive control group and the treatment group induced Streptozotocin doses 40 mg/kg BB rats. The doses of cookies given to the treatment group was 7,2 grams for 21 days. Data were analysis used SPSS 16 application, the data showed no significant difference between the pretest and posttest blood glucose levels in all groups (p>0,05). Effect of black glutinous rice flour cookies did not significant influence in reducing postprandial blood glucose level in diabetic rats by 8,41%.
