Abstract

The process of slaughtering chickens carried out in the Traditional Chicken Slaughterhouse still does not pay attention to the sanitation and hygiene process. Equipment and environment that do not comply with Indonesian National Standards may affect the resulting product. The sanitation and hygiene process at the Traditional Chicken Slaughterhouse is still not considered due to the limitations of capital and knowledge. Improvement of adequate equipment for Traditional Chicken Slaughterhouse is necessary, to improve safe, healthy, whole, and halal meat products. This research is a survey study that uses questionnaires with live interview methods and field observations. Sampling in this study purposive sampling, which is a technique of determining samples with certain considerations. Data collection techniques use the means of live interviews and field observations. The data obtained will be directly analyzed descriptively. The data analysis technique used in the study is descriptive analysis by creating a scoring table. The scoring method is done by determining the weight for each variable and determining the value for each aspect assessed, the weight multiplied by the value will then produce the score, then the resulting score is summed up. Sanitary and hygiene conditions are considered qualified if the total score reaches ≥ 70% and is judged not to be qualified if the total score is 70% of the total maximum score. The results concluded that of the 12 samples surveyed, nine Traditional Chicken Slaughterhouses were included in the sanitation criteria and the remaining three were not included in the criteria because the scores obtained were 70% of the total maximum score. The results that can be concluded from this study as many as nine Traditional Chicken Slaughterhouses in Jember Regency meet sanitary criteria in accordance with Indonesian National Standards and three landfills do not meet sanitary criteria. One Traditional Chicken Slaughterhouse in Jember Regency meets the hygiene criteria of chicken butchers in accordance with Indonesian National Standards and eleven landfills do not meet the hygiene criteria of chicken butchers.
