Abstract

This study aimed to determine the effect of local microorganism (MOL) supplementation of snails ( Achatina fulica ) in the diet on the chemical quality of Joper chicken meat, and what concentration of supplementation with snail MOL in feed has the most effect on the chemical quality of Joper chicken meat. The research parameters were water content, protein and fat content. The experimental design used Completely Randomized Design (CRD) and Analysis of Variance (ANOVA) test, using 150 unsex Joper Chickens, then continued using the test (BNJ) to find out how big the difference was. Snail MOL supplementation in the ration for each treatment have concentrations were different, P0 (control), P1 (5 ml); P2 (10ml); P3 (15 ml); P4 (20 ml), and P5 (25 ml). Results of the study showed that treatment supplementation in the diet of snails MOL as a substitute source of protein in the feed significantly (P <0.05) on water content, protein content, and the fat content of chicken breast meat JOPER. The provision of MOL snail supplementation in the ration had a significant effect on the chemical quality of Joper Chicken meat at the level of administration of 5 to 20 ml/kg to replace concentrate. Key words: Joper chicken, Fermentation, MOL, Snail, Chemical content of meat
