Abstract

Tempe is fermented soybean food by microbes Rhizhopus sp. A discrete white to grayish white, compact texture and distinctive flavor particular or tempeh. Increasing the amount of soy-based food manufacturer in Indonesia led to the need for very large soybean but not accompanied by large soy production anyway. high nutritional content of seeds rubber mainly protein, has the potential to be used as a raw material for tempeh maker. Researchers will try to make tempeh with mensubtitusikan way between the rubber with soybeans in the hope of treatment did not affect the quality of tempe. This research is expected to utilize the rubber seed into food products feasible, safe and acceptable to consumers as well as to reduce the consumption of soy as the main raw material in the manufacture of tempeh. The methods used to analyze the data in this study is completely randomized design non factorial (RAL) 5 treatments and 3 replications. With a difference of substitution treatment factor is the concentration of rubber seeds and soybeans. The observations made in the study of parameters that include parameter HCN, protein, organoleptic and texture. Based on the research that substitution treatment does not affect the content of HCN. The best treatment with the lowest content of HCN (22.908 mg / kg) is the treatment A1. Substitution treatment to give effect to the protein content in soybean. The best treatment with the highest protein content (16.168%) is the treatment A0. Substitution treatment influence on organoleptic (misellium, color, aroma, taste and texture) tempeh. Treatment with the best quality and the level of preference by the panelists is A0 and A1.Perlakuan substitution treatment effect on physical properties (texture) tempe. Treatment with physical properties (texture) is the best treatment of A0 and A1.
