Abstract
This study aims to analyze and design Standard Operating Procedure (SOP) production process of tofu. This research is a qualitative and quantitative study. Qualitative research has the purpose of describing and analyzing phenomena, events, social activities, attitudes, trusted, perceptions and interpreting conditions starting from the pre production, production and post production processes at UD. Jaya Abadi. Quantitative research aims to examine something using scientific procedures and produce research findings and test predetermined hypotheses. This research uses expert system method. This research object is UD. Jaya Abadi located in Panji District Situbondo Regency. UD. Jaya Abadi is a company that manufactures tofu, so we need a quality guarantee for maintaining hygiene products. Therefore, necessary SOP in the running production process. The analysis used is the assessment of CPPB-IRT and Chi Square Test againts defects in tofu products. This research resulted in the proposed improvements to the flowchart, the lowest value of the CPPB-IRT assessment analysis. Application of Standard Operating Procedure that have been implemented in UD. Jaya Abadi and result in a decrease in the level of defects of tofu products. SOP can serve as guidelines in conducting operations so that the production process can be run well.
