Abstract
GMP (Good Manufacturing Practices) is a way of producing food that is good and correct in accordance with established procedures or also known as Good Food Production Methods for Home Industry (CPPB-IRT). This study aims to identify and determine the process of making shrimp paste, the application of GMP (Good Manufacturing Practices), understanding halal certification, and business development that can be carried out by these businesses. This type of research is a type of qualitative research with a descriptive approach. Qualitative descriptive research aims to describe recording, analyzing, interpreting and describing the data obtained to be understood. The sample used in this study was the owner of the Sinar Terang shrimp paste business by using an expert, namely the Jember District Health Office. This study uses a check list method, questionnaire, and interviews. Based on the assessment of the conformity of the CPPB-IRT criteria which consists of 14 aspects and there are 37 elements of irregularities in accordance with the check list method, this business is at level IV which consists of a minor category of 1 element, a major category of 2 elements, a serious category of 2 elements, and a critical category of 1 element. There is a deviation percentage of deviation of 16% which consists of 6 elements besides that there is also a percentage of conformity in the CPPB-IRT criteria of 84% consisting of 31 elements. The Terasi Sinar Terang business owner understands about halal certification but does not know about the obligation for food products to be halal certified because there has not been any socialization by the related institution.
