Abstract
This study compares the performance of two Saccharomyces cerevisiae strains, wine yeast Lalvin EC-1118 and baker’s yeast Fermipan, in molasses fermentation over 96 hours at room temperature and pH 5. The results showed that Fermipan exhibited a higher initial fermentation rate, while Lalvin EC-1118 achieved superior sugar conversion efficiency and ethanol yield, making it more suitable for industrial-scale molasses-based bioethanol production.
