Abstract
This research contains the planning of Standard Operating Procedure (SOP) for the banana chip production section. This research is motivated by the inconsistency of the results of banana chip products that mostly come from the production section. This research uses a qualitative descriptive method that aims to determine the existence of independent variables without making comparisons or looking for variable relationships with each other. Sampling was carried out using Purposive Sampling technique by taking data sources by making certain considerations, namely business owners. The data collection method uses observation, interview, documentation, and literature study techniques. This research aims to design a Standard Operating Procedure (SOP) for the banana chip production process at the Ananda Jaya Banana Chip Production House. The implementation of the SOP can reduce errors and deviations that have occurred so far. So that the banana chip production process can be well controlled which has an impact on consistent product quality. The result of the research is a draft Standard Operating Procedure (SOP) for raw material preparation, frying, and draining and packaging.
