Abstract

Virgin coconut oil (VCO) is a product from coconut meat in the form of a transparaent, tasteless liquid with a distinctive coconut odor. The purpose of this study was to determine the effect of coconut storage time on the yield and quality of the resulting VCO. There were 5 treatments in this study: P0, P5, P10, P15, and P20 with 6 repititions. Data analysis used non-factorial RAL (Completely Randomized Design) followed by the BNJ test. The parameters were yield, water content, fatty acid content and viscosity. The storage treatment of coconuts had a very significant effect on the yield, free fatty acids and had no significant effect on the water content and viscosity. The best treatment was P20 (20 days of storage) yield 15.65%; moisture content 0.2%; free fatty acid content 0.05%; viscosity 6.692 Pa.s.
