Abstract

Coconut water is a natural fresh drink found in nature, coconuts contain calories, glucose, protein, fat, carbohydrates, and various minerals. Purple sweet potato is a type of tuber belonging to the purple sweet potato family Convulaceae .Which has a high enough sugar content so that there is a higher sweetness than other carbohydrate sources . Purple sweet potato can also function as a natural dye in making syrup. The anthocyanins contained in purple sweet potato can be used as natural dyes in food and beverages. This study aims to determine how the effect of the concentration of purple sweet potato extract in coconut water syrup on the level of consumer preference and determine the level of durability of coconut water syrup with the addition of purple sweet potato extract. This study consisted of 6 treatments with the addition of purple sweet potato extract P1(9,09%), P2(16,67%), P3(23,08%), P4(28,57%), P5(33,33%) and one treatment as a comparison, namely without the addition of the extract. purple sweet potato P0(control). The results showed that the addition of purple sweet potato extract to coconut water syrup had an effect on consumer preference. The treatment that has the highest level of preference is P5 with the addition of 33,33% of extract, while P5 has the highest level of durability either stored outside the room or stored in the cooler (refrigator).
