Abstract
Suwar suwir was one of the processed food made from cassava fermented and additives such as sugar, chocolate, milk and others. This research was conducted at UD. Mutiara Rasa on Jl. Cendrawasih 60 Pancakarya Ajung, Jember, East Java, 68131. Every day in the production process that were often damaged products such as mushy texture, the size was not match and the color was not consistent. So companies must be better on their quality control. This research was to analyze the application of suwar-suwir quality control and the causes of suwar-suwir damage using statistical tools. Analysis techniques in this research used pareto diagram, Ishikawa diagram, control map np and process capability (Cp). The results section of this research using Pareto diagram was size variable as the greatest damage. Factors that cause damage of suwar-suwir were human, method and technology factors. The results of calculation using control map np shows that was no point out of the control limit, so it could be said that the production process had been able to completing statistical control. Based on the calculation of process capability (Cp) shows that UD. Mutiara Rasa can produced products that suitable with specification, 95% for size, 97% for colour and 98% for texture variables.
