Abstract

UD. Saudara Jaya is an agro-industrial business that focuses on tofu production. It is located in Jember Regency. This study aimed to acquire the work instructions and company production guidelines through designing, analyzing and evaluating the Standard Operating Procedure (SOP) starting from supplying the raw materials to the final process of raw tofu in UD. Saudara Jaya. The study was qualitative descriptive study with quantitative approach using the expert system. The data analysis used was assessment that refers to the CPPB-IRT (the production system of good food in home industry) Guideline and Paired Sample T-Test to investigate the difference before and after implementing SOP to the defective product of raw tofu in UD. Saudara Jaya. The result of this study was acquired 9 (nine) designs of SOP in raw tofu producion. Based on the result of Paired Sample T-Test, it showed that there was a significance influence between the result before and after implementing the SOP. It means that there was reduction in product disability rate in improving the quality and quality of raw tofu in UD. Saudara Jaya. Whereas, the CPPB-IRT result showed a recommendation for improvements to scope of the company in order it can thrive and always produce best quality and safety products.
